Ingredients (Serves 4)


For the Lamb Marinade

   •   2/3 lb lamb (leg or shoulder), thinly sliced across the grain

   •   2 tbsp soy sauce

   •   2 tbsp rice wine or Shaoxing wine

   •   1 tsp Chinese peppercorn powder (or a pinch of black pepper)

   •   1 tbsp cornstarch


For the Stir-Fry

   •   2 tbsp sesame oil

   •   5 cloves garlic, thinly sliced

   •   2 leeks, cleaned and sliced into thin rounds

   •   1 cup matchstick carrots

   •   1 tbsp fermented Chinese black beans (optional but adds great depth!)


For the Sauce

   •   2 tbsp soy sauce

   •   2 tbsp rice vinegar

   •   1 tbsp sesame oil

   •   1 tsp cornstarch mixed with 2 tbsp water (to thicken the sauce)


Instructions


1. Marinate the Lamb

   •   In a bowl, combine the sliced lamb with the marinade ingredients. Let it sit for at least 30 minutes to absorb the flavors.


2. Stir-Fry the Lamb

   •   Heat 1 tbsp sesame oil in a wok or large pan over high heat.

   •   Add the marinated lamb and stir-fry quickly (about 2 minutes) until the meat turns lightly golden. Remove from the pan and set aside.


3. Stir-Fry the Aromatics & Veggies

   •   Add the remaining 1 tbsp sesame oil to the pan. Toss in the garlic and black beans (if using), stirring for 30 seconds until fragrant.

   •   Add the leeks and carrots, stir-frying for 2-3 minutes until slightly softened but still vibrant.


4. Bring It All Together

   •   Return the lamb to the pan, mixing everything together.

   •   Pour in the sauce, stirring until everything is well coated and the sauce slightly thickens (about 1-2 minutes).


5. Serve & Enjoy!

   •   Sprinkle with toasted sesame seeds for extra flavor.

   •   Serve over steamed rice or noodles, alongside a cup of warm tea for a full TCM-inspired meal.
